Variety of recipe ideas

You can never have too many meatloaf recipes, so I have included another one today. The Peach Pie Salad recipe is a foretaste of the upcoming summer peach pie season.

Baked Chicken

1 lb. chicken breast; boneless and skinned

2 tsp. olive oil

6 Tbls. dry white wine

1/4 c. lemon juice

2 tsp. leaf tarragon; dried

2 tsp. leaf basil; dried

1/2 tsp. hot red pepper flakes

Preheat the oven to 350 degrees. Trim any fat from chicken breast and pound lightly between two sheets of waxed paper to flatten. Coat with olive oil and place in a baking dish. Add wine, lemon juice, herbs and pepper flakes, turning chicken to coat both sides. Cover dish with foil. Bake 25 to 30 minutes, until chicken cooked through.

Old Fashioned Meatloaf

1 small onion

2 eggs

1/2 c. dry crumbs

2 Tbsp. parsley

1 tsp. thyme

3 slices bacon (optional)

1 clove garlic

1-1/2 lbs. ground beef

1/4 c. tomato puree

1 tsp. salt

Pinch pepper

Preheat oven to 350 degrees. Chop onion and garlic. Beat eggs to mix and add all ingredients except bacon and mix until combined. Pack beef mixture into loaf pan and cover with bacon slices. Bake until browned 1 to 1-1/4 hours. Let stand 10 minutes before slicing.

Peach Pie Salad

1 can peach pie mix

1 can fruit cocktail, drained

1 can mandarin oranges, drained

2 bananas, sliced

1 cup miniature marshmallows

Mix all and chill, add nuts if desired.
