Leftover turkey recipes to enjoy

Hopefully you have leftover turkey or ham for today’s recipes.

Creamed Leftover Turkey on Biscuits

3 c. turkey, chicken, or ham, cooked, cubed

1/2 tsp. thyme

2 tsp. oil

1 can cream of mushroom soup

1/2 c. milk

1 can green beans, drained

Heat meat and thyme in oil in skillet for 3 minutes. Blend soup with milk; add to skillet with vegetables. Heat through. Serve over hot buttered biscuits.

Leftover Turkey Gumbo

1 c. leftover turkey

1 frozen pkg. okra

1/2 tsp. thyme

2 chopped onions

1 c. reg. rice

2 tsp. parsley flakes

1 to 2 bay leaves

1 large can tomatoes

1 tsp. sweet basil

3 dashes cayenne pepper

4 dashes minced garlic

Cover turkey with water. Bring to boil. Add bay leaves and cook until meat is warm. Remove bay leaves. Add all other ingredients except for rice. Cook on low covered for a couple of hours. Add rice and cook 30 minutes longer.

Microwave Leftover Turkey and Rice Casserole

1 can cream of mushroom soup (undiluted)

1 c. hot chicken broth

2 c. cubed leftover turkey

1 can (4 oz.) sliced mushrooms

1/4 tsp. celery seed

Combine rice mix, soup and broth in 2 quart micro proof casserole. Cover with casserole lid.

Cook on High 10 minutes. Stir in turkey, mushrooms and celery seed. Cover and cook on High 2 or 3 minutes or until rice is cooked. Remove from oven and let stand, covered, 5 minutes before serving.
