Today I have a variety of recipes that don’t fit into a specific category, other than they are good.

Meatloaf

1 lb. low-fat ground beef

1/2 c. bread crumbs

1/2 or 1 green pepper, diced

1/2 c. tomato sauce, divided

1 onion, diced

Combine all ingredients, except add only 1/4 cup tomato sauce. Shape into a loaf. Place in a loaf pan or baking dish. Bake at 375 degrees for 1 hour. The last 10 minutes pour 1/4 cup of sauce on top of meat loaf and finish baking.

Baked Fish for One

5 oz. fish fillet (flounder, sole, etc.)

1/4 c. julienned carrots

1/4 c. julienned celery

2 Tbsp. chopped tomato

2 Tbsp. chopped onion

1 tsp. dry white wine

salt and pepper to taste

Preheat oven to 400 degrees. Spray a 12-inch square of foil with nonstick cooking spray. Place fillet in center and all other ingredients on top. Fold edges to seal.

Put packet on baking sheet and bake 10 minutes. To serve, pierce foil to release steam. Open carefully and serve immediately with lemon wedge.

Lemon and Lime Cake

1 box yellow cake mix (2 layer)

1 small box lime jello (regular or sugar-free)

1 small box lemon jello (regular or sugar-free)

1 large container Cool Whip

Mix cake mix as directed on box; divide mix into 2 round 9-inch cake pans. Mix jello powder (lime in one pan, lemon in the other). Bake and let cool.

Put Cool Whip on top of bottom layer. Top with second layer and frost with Cool Whip. Refrigerate until ready to serve.
