‘Curbside Cupcakes’ a hit in Marshalltown

Beth Ballard of Marshalltown is shown paying Paige Rustad of Scratch Cupcakery for a chocolate raspberry cupcake Monday morning. Ballard purchased the cupcake for her mother, Geri Jensen, a resident at Grandview Heights Rehab and Healthcare of Marshalltown. The mobile cupcakery was in the Grandview parking lot most of Monday morning and part of the afternoon. Rustad and co-worker Madison Lawrence, both of Cedar Falls, did brisk business from staff, visitors and passersby, partly due to the large van’s colorful exterior, which was visible to drivers on East Olive Street. The businesses has operations in Cedar Falls, Coralville and West Des Moines. The cupcakery was sponsored by St. Jude Hospice of Urbandale. St. Jude offers Catholic hospice care in Iowa, Kansas, Nebraska and Kansas. It will be opening a Marshalltown office in the near future.
