Healthy recipes for the new year
If you’re still sticking to your New Year’s resolution to eat healthy, I have some recipes for you to try.
Spinach-Feta Personal Pizza
1 8-inch flour tortilla
2 Tbls. pizza sauce
1 c. baby spinach
1 sliced Roma tomato
1 Tbls. feta cheese
2 Tbls. low fat mozzarella cheese
Sliced black olives (optional)
Turn on oven broiler.
Spray cookie sheet with spray margarine and place tortilla on sheet. Toast tortilla lightly on both sides under broiler.
Top tortilla with sauce, spinach leaves, and tomato slices. Sprinkle on feta cheese and mozzarella cheese. Place under broiler until cheese melts.
Top with olives if using.
Low-Carb Cheddar Bread
1 large egg
2 Tbls.flax seed meal
1/2 tsp. baking powder
1 packet Splenda
1/4 c. cheddar cheese, shredded
1 tsp. butter
Melt butter in a ramekin. Add and mix egg, flax meal, baking powder & Splenda. Add cheddar cheese and mix. Put in microwave 1 minute, flip bread over and microwave another 10 seconds if not done in middle. Makes one slice of bread. Cut in half, top half with desired sandwich filling
Fresh Fruit Salad with Honey-Yogurt Dressing
1 c. low fat vanilla yogurt
2 Tbls. honey
1/2 tsp. cinnamon
2 large seedless oranges, peeled, sliced, and halved
1/2 pineapple, peeled, cored, sliced, and cut into wedges
1 apple, cored and chopped
1 ripe pear, cored and sliced into wedges
1 kiwifruit, peeled and sliced
In a small bowl, combine the yogurt, honey and cinnamon. Stir well to blend ingredients. Arrange fruit on plates and drizzle the honey-yogurt dressing on top.
