Mince Meat
A former Marshalltown resident, Sister Sheila Geraghty, sent me an old recipe she found for Mince Meat. The key to this recipe is to use the same bowl for measuring the ingredients.
Mince Meat
1 bowl ground beef cooked
3 bowls apples ground
1 bowl suit ground
1 bowl raisins
1 c. vinegar
1 c. sorghum
1 Tbls. cinnamon
1 Tbls. nutmeg
1 Tbls. cloves
Salt to taste
Mix all ingredients together and be sure to use the same bowl to measure the first four ingredients.
The following is a recipe for a last minute gift.
Potato Soup Gift Mix
1-3/4 c. instant mashed potatoes
1-1/2 c. dry milk
2 Tbsp. instant chicken bouillon
2 tsp. dried minced onion
1 tsp. dried parsley
1/4 tsp. pepper
1/4 tsp. dried thyme
1/8 tsp. turmeric
1-1/2 tsp. seasoning salt
Use a one quart, wide-mouth canning jar. Combine all the ingredients together and then pour into the jar. Pack firmly. Seal and decorate jar, and attach the directions which follow.
Potato Soup
You will need:
1 c. boiling water
1/2 c. soup mix
Pour the soup mix into a bowl. Add the boiling water and stir. Serve with bread or crackers if desired.
Antipasta on a Stick
Cubed provolone and salami
Grape tomatoes
Italian salad dressing
Wooden skewers (about 4 inches long)
Slide cheese, salami and tomatoes alternately onto skewers place in container sprinkle with salad dressing. Arrange on bed of greens on a platter when ready to serve.
