Two Marshalltown restaurants receive inspection violations

Two Marshalltown restaurants were cited for violations by the Iowa Department of Inspections and Appeals on Monday following routine inspections.

Ay Caramba, 1803 S. Center St., was cited for four violations:

• The restaurant did not train employees regarding reportable symptoms, or about reporting a diagnosis in a verifiable manner.

• Raw chorizo was stored over raw cuts of steak. The chorizo was then relocated to another shelf, but was stored above raw chicken. According to Iowa code, different types of raw meat must be stored separately without possibility of contact.

• Chicken was only cooked to 111 degrees. The employee said the chicken was removed from the heat for less than one hour, placed in a shallow dish and then into a cooler. Iowa code requires meat must be cooked to 135 degrees.

• Rice, beans, cheese sauce, adobo sauce, barbacoa and cooked meats, which were prepared on June 10, were not marked with dates. An employee then placed the proper date on the prepared items. Iowa code states prepared foods must be kept at 41 degrees for no more than seven days.

Perkins, 3102 S. Center St., was also cited for four violations:

• An employee beverage was placed on a food cutting board. It was then discarded.

• Another employee was observed handling a lemon with bare hands. Iowa code requires gloves to be worn during food preparation.

• Food items were kept at too warm of temperatures – diced tomatoes at 49 degrees; hashbrowns and sliced tomatoes, 44 degrees; and fruit salad at 47 degrees. Iowa code states foods should be maintained at 41 degrees, except when preparing or purposely cooling. The foods were then discarded.

• A food storage lid in the clean dishes area had food built up on the interior. Ice scoops were placed on top of a dirty ice machine. Employees proceeded to wash the items. Iowa code requires food equipment and utensils must be kept clean.

• Perkins had four previous inspections in which violations were found. Two were in December 2021, and the other two were in November 2021.

One other Marshalltown eatery was inspected on Monday – the Big Acai food truck. However, the mobile business was not cited for any violations.
