Zucchini candy … really?

My experience with raising zucchini is that you cannot have enough friends to pawn the vegetable off on or enough recipes to use the ever growing veggie. I have made everything from bread to zucchini pineapple but here is a new one — candy! You will need a food dehydrator for this recipe.

Zucchini Candy

10 c. peeled diced zucchini 1/2-inch cubes

3 c. water

2 pkgs. unsweetened Koolaid -any flavor (grape results in the candy looking black more than purple.

2-1/2 c. sugar

Peel zucchini, diced, removing seeds. Mix the remaining ingredients together. Add zucchini. Bring to a boil and then simmer for 25 min. Drain. Put on dehydrator trays. Dry 14 hours at 125 degrees. Turn pieces over and dry another 4 hours. This will feel dry and not sticky when done. Store in jars or other tightly sealed containers.

If you dip in sugar when you turn them, they will be more like “gum drops” on the outside.

Broccoli Salad

1 bunch broccoli

1 medium onion, sliced thin

2 tomatoes, cut in eighths

1 lb. fresh mushrooms, sliced

1/2 c. canola oil or olive oil

1/2 c. vinegar

1 tsp. sugar

1 tsp. seasoned salt

1/2 tsp. black pepper

Cut broccoli into bite-size pieces; peel stem and slice into pieces. Combine all vegetables in a covered bowl or large zip-lock bag. Combine remaining ingredients and pour over vegetables. Put in refrigerator for 3 days, stirring twice (or turn bag) each day. Serve on third day,

Peach Sheet Cake

1 pkg. white cake mix

1 pkg. (3 oz.) Peach flavored Jell-O

3/4 c. boiling water

1/2 c. cold water

1 pkg. Dream Whip

1-1/2 c. cold milk

1 pkg. (4 serving size) vanilla instant pudding

1 tsp. vanilla

fresh peach slices

Prepare cake mix according to package directions, baking in a prepared 9- by 13-inch pan. Meanwhile, prepare Jell-O by stirring to dissolve in boiling water; add cold water and stir well. Set aside at room temperature.

Let cake cool 20 minutes. Poke holes over top of cake with meat fork. Slowly pour Jell-O over cake. Chill well. Whip together Dream Whip, pudding mix, vanilla and milk until thickened. Frost cake and garnish with fresh peach slices, if desired. Store in refrigerator.
