Beef Hash and Green Bean Casserole
Today I have some easy casserole (better known as “hot dish” in Minnesota) recipes. After all the holiday cooking and eating, I’m ready for some easy comfort food meals.
Beef Hash and Green Bean Casserole
2 (10 oz.) pkgs. frozen green beans
15 oz. can corned beef hash
10 oz. can cream of mushroom soup
3-1/2 oz. can French fried onions
1 c. shredded American cheese
Cook beans as directed on package and drain. Combine with mushroom soup and place in greased 8- by 8-inch pan or baking dish. Spoon corn beef hash over beans and top with onions. Sprinkle cheese over casserole.
Bake at 375 degrees for 15 to 20 minutes, until cheese is melted.
Crock Pot Green Chile Chicken Casserole
4 chicken breasts
1 can mushroom soup
8 oz. sour cream
1 c. green chilies
1 c. mushrooms
Put chicken breast, mushroom soup, chilies and mushrooms in crock-pot and cook six hours on low. Add sour cream 30 minutes before serving. Serve over rice.
Mexican Hot Dog Casserole
1 pkg. hot dogs
1 can (20 oz.) chili
1 can (8 oz.) tomato sauce
1 pkg. (12) flour tortillas
1 pkg. (8 oz.) cheddar cheese, grated
Chopped onion
Roll each hot dog in tortilla and secure with toothpick. Place them side by side in a 13-inch by 9-inch pan. Mix chili with tomato sauce and spoon over hot dogs in tortillas. Sprinkle cheese and onion over top. Bake at 350 degrees for 25 to 30 minutes.
