It’s not too hot to make a pie – if you make it with ice cream.

Easy Strawberry Lemonade Freezer Pie

2-1/2 c. sweetened sliced strawberries

1 package (3.4 oz.) instant lemon pudding mix

1 carton (8 oz.) frozen whipped topping, thawed

1 graham cracker crust

Optional: Additional whipped topping and fresh strawberries

In a large bowl, combine the strawberries (with juices) and pudding mix; let stand until slightly thickened, about five minutes. Fold in whipped topping. Spread into graham cracker crust.

Freeze for at least 8 hours or overnight. Let stand 5-10 minutes before serving. If desired, serve with additional whipped topping and strawberries.

Cherry and Chocolate Ice Cream Pie

15 Oreo cookies

1/4 c. butter, melted

3/4 c. hot fudge ice cream topping

4 c. vanilla ice cream, softened

3 c. fresh or frozen dark sweet cherries, pitted and quartered, divided

1/2 c. water

1/4 c. sugar

2 Tbls. thawed cranberry juice concentrate

1 Tbls. cornstarch

1 Tbls. cherry liqueur, optional

Pulse cookies in a food processor until fine crumbs form. Add butter; process until blended. Press mixture onto bottom and up sides of an ungreased 9-in. pie plate. Freeze until firm, about 15 minutes. Carefully spread hot fudge topping over bottom of crust. Freeze until firm, about 30 minutes.

Combine ice cream and 1 cup cherries; spread over hot fudge. Freeze until firm, about 8 hours.

Meanwhile, in a large saucepan, combine water, sugar, cranberry juice concentrate and cornstarch; bring to a boil over medium heat, stirring constantly. Stir in remaining cherries. Reduce heat; simmer, uncovered, until thickened and cherries are soft, about 5 minutes. Remove from heat; if desired, stir in liqueur. Cool completely.

Remove pie from freezer 10 minutes before cutting. Serve with sauce.

Creamy Coffee Pie

1-1/2 cups Oreo cookie crumbs, divided

1/4 c. butter, melted

2 pints coffee ice cream, softened

1 c. miniature marshmallows

1 c. miniature semisweet chocolate chips

2 c. whipped topping

2 Tbls. caramel ice cream topping

2 Tbls. hot fudge ice cream topping, warmed

Additional Oreo cookies, optional

Combine 1-1/4 cups crushed cookies and butter. Press onto bottom and up the sides of a 9-in. pie plate. In a large bowl, combine ice cream, marshmallows, chocolate chips and remaining crushed cookies. Spoon into crust. Freeze for 30 minutes.

Spread whipped topping over pie. Drizzle with caramel and hot fudge toppings. Remove from freezer 10-15 minutes before cutting. If desired, serve with additional cookies.
