Hearty recipes

It’s starting to feel like fall and that means more hearty recipes

Frosted Meat Loaf

1-1/2 lbs. lean ground beef

1 can Golden Onion Soup

1 c. small bread cubes

1/4 c. finely chopped onion

1 egg, slightly beaten

Salt and pepper, to taste

2 c. prepared mashed potatoes (with butter, milk and a little salt and pepper)

1/4 c. water

1 to 2 Tblsp. drippings from meat loaf

Mix thoroughly the beef, half cup soup, bread cubes, onion, egg, salt and pepper (you don’t need much salt, as is salt is in the soup). Place mixture in a shallow baking pan and shape into a loaf. Bake at 350 degrees for one hour. Frost loaf with mashed potatoes (top and sides) and bake 15 minutes longer.

Blend remaining soup, water and drippings and heat. Serve over loaf.

Pasta Fajoile (Pasta & Beans)

2-4 Tblsp. olive oil

Minced garlic to taste

2 cans Cannelini Beans, not drained

2 (15 oz) cans Chicken Stock

4 Tblsp. butter or margarine

1 29 oz can Plum Tomatoes crushed by hand

12 oz pasta cooked al dente. ( better to undercook pasta.)

Romano or Parmesan cheese

Basil leaves (fresh or dried)

Salt, pepper, parsley

Saute garlic in olive oil until slightly browned. Add beans WITH JUICE, butter and chicken stock. Cook until beans start to break down (IMPORTANT) Add Tomatoes (crushed).

Bring to boil. Add the pasta and thoroughly heat through. Add salt, pepper and parsley. Serve in bowl and add cheese. Good with crusty bread.

Egg Casserole

1 lb. bacon, cooked & crumbled

1 dozen extra lg. eggs

2 c. seasoned croutons

3-1/2 c. milk (skim is okay)

1/2 tsp. salt

1/2 tsp. pepper

1/2 tsp. thyme

6 oz. shredded cheddar cheese

Butter a 9- by 13-inch pan. Layer croutons first, cheese next. Mix eggs with milk and spices and pour over top. Add crumbled bacon. Bake at 350 degrees for one hour. Done when knife comes out clean.

Can mix night before.
