I scream for ice cream

Since June is Dairy Month I have a couple of ice cream recipes. The Mock Ice Cream Sandwich recipe is just an easy and good treat any month of the year.

Easy Homemade Ice Cream

1/2 c. milk (you can use skim)

1 Tbsp. sugar

1/4 tsp. vanilla extract (or any flavor extract)

Ingredients Needed to Make Ice Cream:

Ice cubes

6 Tbsp. salt

Resealable Ziploc Bags (1 pint and 1 gallon sized)

Place milk, sugar and extract in pint sized bag and seal.

Fill gallon-sized bag halfway with ice cubes. Add salt to ice.

Place the pint sized sealed bag inside the gallon sized bag on top of ice.

Seal gallon sized bag. Shake bags vigorously for about 4 min or until mixture inside pint sized bag freezes.

Remove pint sized bag from gallon sized bag.

Discard contents of gallon sized bag.

Place contents of pint sized bag into bowl and enjoy.

Burnt Caramel Ice Cream

2/3 c. sugar

1/4 tsp. salt

2 c. whole milk

1 c. heavy cream

Mix the milk and cream. Set aside

Caramelize sugar with salt in medium saucepan over medium low heat.

Add half of the milk and cream mixture. Simmer over low heat stirring often for about 10 to 12 minutes.

Add the rest of the cream mixture.

Chill in the fridge or pour mixture in a metal bowl and stick it in the freezer. Every 20 minutes, stir vigorously with a fork, whip or hand-held mixer.

This should have the consistency of soft serve.

Mock Ice Cream Sandwiches

2 c. whipped topping (like Cool Whip)

1/2 c. mini chocolate chips

8 whole graham crackers (I like using the chocolate ones)

In a bowl, combine whipped topping and chocolate chips. Break or cut graham crackers in half. Spread whipped topping mixture over half of the crackers; top with remaining crackers. Wrap in plastic wrap and freeze for at least 1 hour.
