Ah, the comfort of comfort foods

Since I don’t have spring fever, I am into making comfort foods and nothing is more comforting than meatloaf, cookies and/or sweet treats.

Brown Sugar Meatloaf

1/2 c. packed brown sugar

1/2 c. catsup

1-1/2 lbs. lean ground beef

3/4 c. milk

2 eggs

Salt, to taste

1/4 tsp. pepper

1 small onion, chopped

1/4 tsp. ground ginger

3/4 finely crushed saltine cracker crumbs

Press the brown sugar into the bottom of 9×5 inch loaf pan, and spread with catsup. In a mixing bowl, combine remaining ingredients thoroughly. Shape into a loaf and put on top of the catsup-brown sugar mixture. Bake at 350 degrees for 1 hour and 15 minutes, or until juices run clear.

Quick and Chewy Crescent Bars

1 can Crescent Rolls

1 can condensed milk 15 oz.

1 box coconut pecan frosting mix

1/2 c. melted butter or margarine

Preheat oven to 400 degrees. Place rolls in ungreased 15- by 10-inch jelly roll pan, press to fill bottom of pan and close all perforations in dough. Pour can of condensed milk over dough. Sprinkle frosting mix over milk and drizzle on top. Bake for 12 to 15 minutes.

Cool and cut into bars.

Oatmeal Cookies

1-1/2 c.soft butter

2 c. packed brown sugar

1 c. white sugar

2 eggs

4 c. quick cooking oatmeal

3 c. flour

1-1/4 c. graham cracker crumbs

2 tsp. salt

1 tsp. baking soda

2 c. raisins

1/2 c. water

2 tsp. vanilla

1 c. chopped walnuts (optional)

butter/margarine

Beat butter, sugars, eggs, water and vanilla til creamy. Add dry ingredients. Mix well.

Add raisins and nuts (no need to soak raisins in water first). Drop onto lightly greased baking sheets. Bake at 350 degrees for 11 minutes.
