Stir Fry Ramen Dinner

Since the Banana Cream Pie requires a little more time to make, I included a really easy stir-fry recipe.

Stir Fry Ramen Dinner

2 pkgs. Ramen noodles

Leftover cooked meat or half chicken breast or equivalent beef or pork (raw)

Vegetables from your refrigerator

2 packets seasoning mix from Ramen noodles

Cook noodles as directed, using one packet of seasoning in the water if desired. Drain. Chop up raw meat and stir fry in a little oil. Stir fry vegetables such as onion, celery, carrots, cabbage or whatever you have on hand. If you are using cooked leftover meat, stir in to warm only. Stir cooked and drained noodles into meat/veggie mixture. Stir in second packet of seasoning mix.

Greek Orzo Bake

1 c. orzo pasta

1 c. feta cheese, crumbled

6 kalamata olives, pitted and chopped

2 tomatoes, seeded and diced

2 garlic cloves, minced

1/4 c. onion, chopped

1 Tbls. fresh oregano, finely chopped

1 Tbls. fresh basil, finely chopped

1 Tbls. olive oil

salt and pepper

Preheat oven to 325 degrees. Cook orzo until al dente. While the orzo is cooking, sauté onion and garlic until softened. Stir in tomatoes and cook for 2-3 minutes. Turn off heat. Add the olives, oregano and basil to the pan and mix well.

Add the drained orzo, crumbled feta cheese, olive oil and stir. Add salt and pepper to taste.

Transfer to an oven-proof covered baking dish and bake in the oven for 15 minutes.

Banana Cream Pie

12 level Tbls. flour

1-13 c. sugar

1/2 tsp. salt

3-1/2 c. milk

4 egg yolks, beaten slightly

2 tsp. vanilla

1/2 pint whipping cream

6 or 7 bananas

2 baked pie shells

Mix flour, sugar and salt in top of a double boiler. Stir in milk. Cook over boiling water and stir constantly until mixture thickens a little. (This pie has been made over direct heat but has to be stirred constantly and watched very carefully.) Cover and cook 15 minutes longer, stirring occasionally. Add beaten egg yolks, stirring rapidly. Cook for 2 minutes, stirring rapidly. Remove from heat, add vanilla. Cool and chill until cold. Whip cream till stiff and add to filling. Stir in sliced bananas last. Will fill two baked pie shells.
