Cucumber Salad
Today I have an easy meal you might want to make this week.
Cucumber Salad
1 cucumber, sliced thin, peeled if desired
1 red onion, sliced thin
2 Roma tomatoes, chunked
1/4 c. rice vinegar
salt, to taste
pepper, to taste
1 Tbsp. sugar
1/4 c. vegetable oil
1/4 c. water
Place all ingredients in an airtight glass jar that can be shaken before each serving. Chill for several hours or overnight for the flavors to blend. This mixture does not have to be refrigerated.
BBQ Wings
3 lbs. chicken wings
garlic powder
12 to 16 oz. your favorite barbecue sauce
Spray crock pot with cooking spray. Add the wings and sprinkle generously with garlic powder and barbecue sauce over the top. Cover and cook for six to eight hours on low heat, until falling off the bones tender.
Peanut Butter Paisley Brownies
1/2 c. butter
1/4 c. peanut butter
1 c. sugar
1 c. brown sugar
3 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. chocolate syrup
Mix all ingredients together well, except for the chocolate syrup.
Put half the batter into a greased 9- by13-inch baking pan. Spoon chocolate syrup over top and carefully spread remaining batter on top. Swirl with a knife for marbled affect. Bake at 350 for 30 to 35 minutes, or until lightly browned and tests done with toothpick.
Cool and cut into squares.
